VEGAN BANANA COOKIES ▢ 2 Fresh Medium Bananas ▢ ⅓ cup Maple Syrup ▢ 1 cup Spelt Flour OPTIONAL ▢ ⅓ cup Vegan Dark Chocolate Chips
In a medium-size mixing bowl, mash the banana into a puree. It is ok if there are few lumps.
Stir the maple syrup into the 3-Ingredient Banana Cookies batter. Combine with a spoon.
Stir in flour until it forms a wet, sticky cookie dough, similar to banana bread dough.
Scoop out dollops of Vegan 3-Ingredient Banana Cookies dough on the prepared tray.
Slightly spread the dough with the back of a spoon into a round banana cookie shape.
Leave a 1-thumb space between each cookie. The cookies won't expand in the oven. Preheat oven to 350°F (180°C).
Bake the Vegan 3-Ingredient Banana Cookies 12 minutes or until slightly golden on the top.
Store the 3-Ingredient Banana Cookies in the fridge in an airtight box for up to 3 days.
