In a large mixing bowl, combine the peanut butter, maple syrup, and melted refined coconut oil.
Add the optional vanilla, sea salt, and stevia drops now. Stir the peanut butter fudge mixture with a silicone spatula.
Keep incorporating the maple syrup and coconut oil until the mixture is smooth, shiny and no maple syrup shows.
Line a 9-inch x 5-inch loaf pan with parchment paper. Pour the peanut butter fudge mixture into the prepared pan.
Flatten the top of your 3-Ingredient Peanut Butter Fudge with the silicone spatula to ensure it sets uniformly.
For a very Christmas fudge, add Christmas sprinkles or 100s and 1000s on top of your fudge.
Leave the peanut butter fudge in the freezer for 30 minutes until it's set enough to be cut into small cubes.
Slice your peanut butter fudge into 12 small square and enjoy them immediately or store them for up to 3 months in the freezer.
