DOUGH ▢ 4 - 4 ½ cups All-purpose Flour ▢ 3 tsp Sugar ▢ 2 ¼ tsp Instant Yeast ▢ 1 ½ cup Lukewarm Water ▢ 3 tbsp Olive Oil ▢ ¼ tsp Garlic Powder ▢ 1 tsp Salt PIZZA ▢ 2 tsp Olive Oil ▢ ⅔ cup Pizza Sauce ▢ 1 cup Shredded Vegan Cheese ▢ 1 cup Sundried Tomatoes
In a small mixing bowl, whisk yeast, sugar, and lukewarm water. Set aside for 5 minutes until foamy.
In another bowl, add white spelt flour, salt, and garlic powder. Give a good stir or use the hook attachment to blend for a few seconds on speed 2.
Make a well in the center of the flour and add the yeast mixture and olive oil.
Mix with a wooden spoon to bring the ingredients together into a dough, then transfer onto a floured surface.
Hand knead the Pizza Base dough for 5 minutes, until smooth, elastic, and not sticky
Knead the vegan pizza dough in your stand mixer with the dough hook for 4-5 minutes.
Place the dough in a lightly oiled bowl, cover with a piece of plastic wrap and a clean kitchen towel on top.
Place the bowl in a warm place or an oven preheated to 45°C (110°F) for about 45 minutes to 1 hour.
Remove dough from the bowl, punch down to deflate, and knead again on a floured surface for about 2 minutes.
Divide dough in half to make pizza rolls. Then roll each dough ball on a floured surface.
On a floured surface, roll half of the dough into a 10x12-inch rectangle and brush 1 teaspoon olive oil on top of the dough.
Poke the Vegan Pizza Rolls dough with your fingers to create an uneven surface.
Spread 1/3 cup pizza sauce on the Vegan Pizza Roll base, leaving 1 inch empty from the sauce on the sides.
Top the Vegan Pizza Base with 1/2 cup shredded vegan cheese and 1/2 sundried tomatoes.
Tightly roll the dough into a cylinder as you would for cinnamon rolls, starting from the long sides of the rectangle.
Pinch the top of the Vegan Pizza Rolls to seal the seam and prevent ingredient overflow.
Place the log onto a chopping board, seam down, and freeze for 15 minutes. Slice it into twelve 1-inch thick rolls.
Spray the air fryer basket with cooking oil - avocado or olive oil. Place the Vegan Pizza Rolls in a single layer in the air fryer basket.
Air fry the Vegan Pizza Rolls at 390°F (200°C) for 11-12 minutes or until golden brown and crispy.
