Almond Flour Shortbread Cookies ▢ 1 ½ cup Almond Flour ▢ 3 tbsp Maple Syrup ▢ 3 tbsp Melted Coconut Oil
Combine the vegan shortbread cookie ingredients: almond flour, maple syrup, and coconut oil.
Use a silicone spatula to combine the shortbread cookie batter until smooth and consistent.
Knead the dough with your hands to make it smooth.
Form a large shortbread cookie dough ball.
Use an ice cream scoop to scoop out some cookie dough. Roll the dough with your hands.
Place each shortbread cookie dough ball on a baking sheet lined with parchment paper.
Flatten the shortbread cookies with their signature single fork mark.
Optionally add a few sprinkles to decorate the shortbread cookies
Bake the shortbread cookies for 10 to 12 minutes at 325°F (160°C).
Let the cookies cool down on their tray for 5 minutes and transfer then to a cooling rack.
