Buckwheat Crepes ▢ 2 ½ cups Buckwheat Flour ▢ 3 cups Cold Water ▢ ½ teaspoon Sea Salt Optional (For A Sweet Version) ▢ 1 teaspoon Vanilla Extract ▢ 2-3 tablespoons Sugar
Combine all the dry Vegan Buckwheat Crepes ingredients in a large mixing bowl: buckwheat flour, salt, and sugar (if used). Whisk them until they are well combined.
Gradually pour the cold water and vanilla extract into the buckwheat crepe mixture while whisking before setting the batter aside for 15 minutes at room temperature.
Heat a 10-inch pancake pan greased with olive oil, and pour ½ cup of vegan buckwheat crepe batter while tilting the crepe pan to make the largest crepe possible.
Cook the vegan buckwheat crepes on medium heat for 2 to 3 minutes before flipping the crepe with a spatula and cooking the other side for another minute.
