Peel and shred the carrots with a hand shredder or food processor shredder.
Combine the salad dressing ingredients in a small bowl and whisk.
Toast the almonds, pecan nuts, pumpkin seeds in a frying pan for 2-3 minutes.
Pour the dried raisins, toasted nuts and seeds, chopped parsley on the shredded carrots.
Pour the lemon-orange spicy dressing onto the carrot raisin salad.
Stir the salad with spoons to let all the flavors combine. Reserve in the fridge for one hour.
