Carrot Raisin Salad ▢ 1 pound Grated Carrots ▢ ½ cup Golden Dried Raisins ▢ 6 tbsp Toasted Nuts And Seeds ▢ 2 tbsp Fresh Parsley Lemon Orange Spicy dressing ▢ ¼ cup Extra Virgin Olive Oil ▢ 1 tsp Dijon Mustard ▢ 2 tbsp Lemon Juice ▢ 1 tbsp Orange Juice ▢ ¼ tsp Garlic Powder ▢ ½ tsp Maple Syrup ▢ ¾ tsp Salt

Peel and shred the carrots with a hand shredder or food processor shredder.

Combine the salad dressing ingredients in a small bowl and whisk.

Toast the almonds, pecan nuts, pumpkin seeds in a frying pan for 2-3 minutes.

Pour the dried raisins, toasted nuts and seeds, chopped parsley on the shredded carrots.
