VEGAN SPINACH ARTICHOKE DIP

INGREDIENTS

SPINACH ARTICHOKE ▢ 2 tbsp Olive Oil ▢ 4 cloves Garlic ▢ ½ cup Pine Nuts ▢ 5 oz Baby Spinach ▢ 1 cup Artichokes Hearts CHEESE SAUCE ▢ 1 cup Cashews  ▢ 1 cup Vegetable Stock ▢ 1 cup Water ▢ ½ tbsp Onion Flakes ▢ ½ tsp Garlic Powder ▢ ½ tbsp Hot sauce ▢ 1 tsp Parsley ▢ ½ cup Nutritional Yeast ▢ 1 tbsp Worcestershire Sauce ▢ 1 tsp Apple Cider Vinegar ▢ 8 tbsp Arrowroot Flour

Heat Skillet

Heat a large skillet over medium heat with olive oil and add crushed garlic.

Add Pine Nuts

Saute garlic for 30 seconds then add pine nuts, stir and roast for 1 minute.

Add Spinach

Add the spinach leaves to fill the skillet. Stir, turn the leaves in warm garlic and roasted pine nuts until the spinach has wilted.

Add Artichoke

Once all the spinach has wilted, stir in chopped artichokes hearts and salt.

Cook Artichoke Spinach

Cover, cook for 1-2 minutes then remove from heat. Set aside.

Add All Sauce Ingredients

In a blender, add all the sauce ingredients: cashews, vegetable stock, water, onion, garlic, nutritional yeast, etc.

Blend

Blend until smooth. Pour the sauce onto the pan with the cooked spinach artichokes mixture.

Cook

Cook over medium heat, constantly stirring, until the sauce gets bubbly, thickens, and creates a cheesy texture.
