Chocolate Peanut Butter Cookies ▢ ½ cup Natural Peanut Butter ▢ ¼ cup Maple Syrup ▢ ½ cup Almond Flour ▢ 3 tbsp Cocoa Powder
In a large mixing bowl, combine the natural peanut butter and maple syrup until the peanut butter mixture is creamy and smooth.
Add any of the optional ingredients into the Chocolate Peanut Butter Cookie mixture like vanilla extract or a pinch of salt and stir to combine.
Add the almond flour into the bowl with the peanut butter mixture. Almond flour has 7 to 10 times less carbs than whole-wheat flour making these cookies low in carbs!
Add the unsweetened cocoa powder (or cacao powder) to the bowl before stirring the chocolate peanut butter cookie mixture with a silicone spatula.
Stir the Chocolate Peanut Butter Cookie mixture thoroughly until completely combined and it has a smooth and shiny texture.
Use your hands to squeeze and knead the chocolate peanut butter cookie dough and form a large, smooth cookie dough ball.
Divide the vegan cookie dough into 8 balls of the same size and place each ball onto a cookie sheet lined with parchment paper, leaving 1 thumb space between each ball.
Press down the cookie dough ball with the back of the fork to form a cross on top of the cookies. If you like, decorate with sprinkles and press them in using the fork again.
Bake the vegan chocolate peanut butter cookies for 8 to 12 minutes or until set on top in an oven preheated to 350°F (180°C).
