Easy Vegan Recipe
These Chocolate Protein Muffins are high-protein vegan muffins loaded with more than 5 grams of plant-based protein each.
They are ridiculously easy to make and can be made in just about 15 minutes!
Chocolate Protein Muffins ▢ Unsweetened Soy Milk ▢ Plant-Based Yogurt ▢ Apple Cider Vinegar ▢ Oat Flour ▢ Chocolate Protein Powder ▢ Unrefined Cane Sugar ▢ Unsweetened Cocoa Powder ▢ Baking Powder ▢ Light Olive Oil ▢ Vanilla Extract ▢ Salt
Combine the vegan yogurt, plant-based milk, apple cider vinegar in a mixing bowl for 5 minutes until the mixture curdles like vegan buttermilk.
Combine all the dry Chocolate Protein Muffin ingredients in a mixing bowl: flour, protein powder, baking soda, and salt until all flour lumps have been broken down.
Fold the dry ingredients into the bowl with the wet vegan chocolate protein muffin batter and combine them with a spatula until it's smooth and shiny.
Pour the Chocolate Protein Muffin batter into a 12-hole muffin tray lined with only 10 muffin cups and bake them for 20 minutes in an oven preheated to 350°F (180°C).
Let the chocolate protein muffins cool down for 20 minutes on a cooling rack before frosting them into protein cupcakes, or serve them hot with a pinch of salt.
