Vegan Banana Bread ▢ 1 ½ cup Mashed Ripe Bananas ▢ ¼ cup Coconut Sugar ▢ ⅓ cup Light Olive Oil ▢ 1 tsp Vanilla Extract ▢ ½ tsp Salt ▢ 1 ½ cup All-purpose Flour ▢ 2 tsp Baking Powder ▢ ½ tsp Baking Soda ▢ 2 tsp Ground Cinnamon
Mash the bananas before measuring the amount required and combine with olive oil, vanilla extract, coconut sugar, and salt in a large mixing bowl.
Combine the dry vegan banana bread in another mixing bowl and pour on top of the wet ingredients before stirring the batter with a spoon or the paddle attachment.
Transfer the classic vegan banana bread batter into a loaf pan lined with parchment paper before cooking it for 50 minutes in an oven preheated to 350°F (180°C).
Let the Vegan Banana Bread cool down for a few minutes in the pan before transferring it to a cooling rack for another 3 hours of cooling.
