Place the Jasmine Rice in a large saucepan and cover it with cold water before stirring it to release the excess starch contained in the grains.
Drain the cloudy water over a fine sieve and repeat the rinsing 4 to 5 times until the water doesn't get cloudy anymore.
Add the remaining Coconut Jasmine Rice ingredients into the saucepan: coconut milk, water, vegetable stock, sugar, and lime juice and bring to a boil before simmering for 12 minutes.
Stop the heat, and let the rice cool down for 8 minutes in the saucepan before transferring it to a wooden bowl for another 10 minutes of steaming out.
