Combine the Vegan Cashew Pasta Sauce ingredients in the jug of a blender.
Blend the Cashew Pasta Sauce at high speed until it is smooth and silky.
Cook sliced mushroom on olive oil in a large saucepan. Sprinkle dried parsley and let it simmer.
Add Vegan Butter, then the Vegetable Stock and Cashew Pasta Sauce. Stir and let it simmer.
When the creamy vegan mushroom sauce is ready, pour the cooked pasta and stir.
Serve the Vegan Creamy Mushroom Pasta with fresh Italian Parsley and toasted pine nuts.
