CUCUMBER DIP (TZATZIKI)

INGREDIENTS

▢ 1 ½ cup Plain Coconut Yogurt ▢ 2 tbsp Fresh Mint ▢ 2 Garlic Cloves ▢ 2 tbsp Extra Virgin Olive Oil ▢ 1 tbsp Lemon Juice ▢ ½ tsp Paprika ▢ ½ tsp Salt ▢ 2 cups Shredded English Cucumber

Grate Cucumbers

Trim the end of the cucumber, peel them, and seed the center before grating them and placing in a towel.

Squeeze Cucumber

Squeeze the towel to release the excess water from the cucumbers. Discard the juice.

Combine Ingredients

Stir in Greek Coconut yogurt, fresh chopped mint, crushed garlic, salt, paprika, lemon juice, and olive oil.

Serve Cucumber Dip

Once the ingredients are well combined, serve immediately or chill for 1 hour before serving.
