Before making the Pecan Pie filling, make the Vegan Pie Crust

In the food processor bowl, combine all the crust ingredients.
Stop the processor when the dough is well combined.
Knead the gluten-free dough with your hands and make a large dough ball.
Either roll the dough with a rolling pin or press it directly in the pan.
Press the gluten-free vegan pie crust on the edges of your pie pan.
Prick the pie crust with a fork and prebake it for 8 minutes at 350°F (180°C).
Combine the pecan filling ingredients in a saucepan. Stir until the mixture boils and simmer for a few minutes.
Spread the chopped pecans on the prebaked gluten-free pie crust.
Pour the hot pean pie filling on the pecan nuts. Cover them evenly.
Bake the Vegan Pecan Pie for 30-40 minutes at 350°F (180°C).
