Easy Vegan Recipe
Green Beans Almondine ▢ 1 pound Fresh Thin Green Beans ▢ 3 tbsp Extra Virgin Olive Oil ▢ ½ cup Sliced Almonds ▢ 1 medium Shallot ▢ 1 tbsp Vegetable Stock ▢ ½ tsp Salt ▢ ¼ tsp Ground Pepper ▢ 1 Garlic Clove ▢ 2 tbsp Chopped Parsley
Wash the green beans and trim the ends by lining them on a board and cutting a bunch.
Sautee the sliced almonds in a large saucepan with olive oil. Toast for 3 minutes.
Set aside the toasted almonds in a bowl covered with a lid while you cook the green beans.
Cook the sliced shallots in olive oil until fragrant. They cook faster than onions, keep an eye on them.
Add the green beans to the shallots and sauté them for 2 minutes. Add the stock and cook for another 5 minutes.
Serve immediately with salt, pepper, and the toasted sliced almonds on the top.
