Buckeye
Buckeye Balls - or Buckeye Candies - are named after the Ohio Buckeye tree and originated in the 1960s. The normal recipe uses a lot of sugar and butter.
INGREDIENTS
1/2 cup Natural Peanut butter
1/4 cup Maple syrup
1 teaspoon Melted coconut oil
1 teaspoon Vanilla extract
3/4 cup Almond flour
2 tablespoons Coconut flour
1 tablespoon Coconut oil
1 cup Vegan dark chocolate chips
CHOCOLATE COATING
Combine PB & Coconut Oil
In a large mixing bowl, combine peanut butter with coconut oil

Add Maple Syrup
Add Maple Syrup and Vanilla Extract. Stir until fully combined.

Add Almond Flour
Stir in the almond flour.

Add Coconut Flour
Add the Coconut Flour to form a thick batter.

Combine the flour
Stir the dough with a spatula until the flours are fully combined. Scoop out 1 tablespoon of batter and roll into a ball. Place each ball onto a plate covered with parchment paper and freeze for 15 minutes.

Chocolate Dipping
Dip into melted chocolate leaving a circle uncovered by chocolate on top of the balls. Use a toothpick to keep your fingers clean.

Press the balls
Press the top of the balls to hide the toothpick hole for a typical Buckeye Ball shape

Freezing
Freeze the plate again to firm up the chocolate shell - about 5-8 minutes.
