ROASTED PUMPKIN PUREE ▢ 4 pounds of Pumpkin OPTIONAL (TO THIN OUT) ▢ Water
Choose a winter squash pumpkin, like the Jack-O-Lantern, Buttercup, Kabocha, or Porcelain Doll.

Cut your chosen pumpkin into half-moons, then scoop out the pumpkin seeds. Discard them.

Place the pieces of pumpkin on a baking sheet lined with parchment paper, flesh up.

Roast the Pumpkin on the center rack of an oven preheated to 400°F (200°C) for 50 to 60 minutes.

Remove from the oven and cool down before handling. Scoop out the pumpkin flesh with a spoon.

Place the Roasted Pumpkin flesh in a food processor with the S blade attachment. Discard the pumpkin skin.

Blend the roasted pumpkin flesh at high speed until it reaches a puree consistency.
