This Vegan Irish Soda Bread is made with a mock buttermilk for a completely dairy-free version of the classic bread.
It has a dense, soft crumb with a crunchy crust and the signature cross at the top. And it only takes 5 ingredients and 10 minutes of preparation to make it!
Irish Soda Bread Without Buttermilk ▢ All-purpose Flour ▢ Baking Soda ▢ Salt ▢ Full-fat Milk of Choice ▢ Lemon Juice
Prepare the mock buttermilk by combining Soy Milk (or any plant-based full-fat milk of your choice) with lemon juice before letting it thicken for 10 minutes.
Combine the all-purpose flour, baking soda, and salt in a large mixing bowl before gradually pouring the mock buttermilk mixture onto it.
Stir the plant-based Irish Soda bread batter with a wooden spoon until the dough becomes shaggy - not smooth but with no dry flour spots.
Fold the dough on itself up to eight times to work it perfectly. The dough ball should be cohesive but slightly rugged with small cracks and bumps.
Transfer the Irish Soda Bread dough to a baking tray covered with a piece of parchment paper and make a large, deep cross with a kitchen knife on its top.
Bake the bread for 20 to 30 minutes in an oven preheated to 430°F (220°C) and then let it cool down for at least one hour before slicing it.
