▢ ½ cup Old-Fashioned Rolled Oats ▢ 2 tsp Chia Seeds ▢ ½ cup Unsweetened Almond Milk ▢ ¼ cup Coconut Yogurt ▢ ¼ cup Canned Pumpkin Puree ▢ 1 tbsp Maple Syrup ▢ ½ tsp Vanilla Extract ▢ 1 tsp Cinnamon ▢ ¼ tsp Ginger ▢ ⅛ tsp All Spices
In a wide bowl, combine the dry ingredients: rolled oats, chia seeds, cinnamon, ginger, and all spices (or nutmeg).
In another bowl, combine wet ingredients: pumpkin puree, almond milk, coconut yogurt, maple syrup, and vanilla extract.
Pour the liquid pumpkin oats ingredients into the dry ingredients and combine with a spoon.
Wrap the top of the bowl with plastic wrap or a silicone lid. Set in the fridge overnight.
