Combine the cashew butter, maple syrup, and vanilla extract in a mixing bowl.
Add the pumpkin puree, and all the other pumpkin truffles ingredients and combine.
Scoop out one tablespoon of batter and form a truffle-sized ball.
Keep rolling more pumpkin truffles until you've made 16 of them.
Take the 16 Vegan Pumpkin Truffles to the freezer for 8 minutes.
Dip each of the pumpkin truffles into melted hot chocolate or vegan white chocolate.
Decorate the Pumpkin Truffles with more vegan white chocolate and chunks of pecans and walnut.
