Scoop out all the seeds of the pumpkin. Keep the flesh to make one of my other pumpkin recipes or make a Jack-o'-Lantern!
Wash the pumpkin seeds and discard all the pumpkin strains and fiber still attached until the seeds are less slimy.
Place the washed pumpkin seeds on a clean tablecloth and let them air dry overnight or for a few days.
Toss the seeds with your chosen spice option in a bowl and transfer them to a baking sheet on a single layer. Bake for 12 minutes at 350°F.
