▢ 1 cup Fresh Baby Spinach Leaves ▢ ½ cup Mashed Banana ▢ 3 tbsp Maple Syrup ▢ ¼ cup Natural Peanut Butter ▢ 1 tsp Vanilla Extract ▢ 1 cup Quick Oats ▢ 1 tsp Baking Powder
Add all the spinach, banana, peanut butter, maple syrup, and coconut oil to a food processor.
Process until combined and transfer the spinach cookie batter to a mixing bowl
Pour the quick oats and baking powder into the spinach cookie batter.
Add the chocolate chips and combine the batter until well mixed.
Form 14 spinach cookie balls using an ice cream scoop.
Flatten each cookie by pressing them with your hands.
Bake the Spinach Cookies for 12 to 15 minutes at 350°F (180°C).
Transfer the Vegan Spinach Cookies to a cooling rack.
