Peel, dice, and boil the sweet potatoes. Mash them when cooked.

Combine the wet sweet potato muffin ingredients in the jug of a blender.

Transfer the wet sweet potato muffin ingredient into a mixing bowl.

Combine the dry sweet potato muffin ingredients in a bowl.

Pour the dry ingredients onto the wet ingredients and combine with a wooden spoon.

Transfer the batter into 12 prepared muffin cases and bake them at 350°F for 30 minutes.
