Peel and mash ripe bananas before measuring the 1/2 cup needed by the recipe, then place them into a large mixing bowl.
Add the liquid vegan banana pancake ingredients to the bananas: almond milk, vanilla extract, coconut oil, and maple syrup and whisk them to combine.
Pour the dry vegan banana pancake ingredients into the liquid ingredients: flour, cinnamon, baking powder, baking soda, and sugar. Stir them to combine.
Warm a non-stick crepe pan or pancake griddle over medium heat and grease it with a spray of vegetable oil or some vegan butter spread with a paper towel.
Pour two tablespoons of vegan banana pancake batter on the hot pan and let it cook for 2 to 3 minutes until the edges of the pancake are set and bubbles form.
Flip the Vegan Banana Pancakes by sliding a spatula under them and cook them on their other side for another minute before reserving them on a plate.
