INGREDIENTS

▢ 1 1/2 cup All-purpose Flour ▢ 1 teaspoon Baking Powder ▢ 1 teaspoon Baking Soda ▢ 1/2 teaspoon Salt ▢ 1 teaspoon Cinnamon ▢ 1/4 teaspoon Ginger ▢ 1 1/2 cup Mashed Bananas ▢ 1/2 cup Melted Coconut Oil ▢ 2 tablespoons Almond Milk ▢ 2/3 cup Coconut Sugar ▢ 1 teaspoon Vanilla Extract

Combine Dry Ingredients

In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.

Mash Bananas

In another large mixing bowl, mash the bananas. Whisk in melted coconut oil, coconut sugar, vanilla extract, and almond milk.

Combine

Pour the dry ingredients into the wet ingredients and whisk just enough to combine and create a thick consistent muffin batter.

Add Optional Ingredients

Fold in any chopped nuts or chocolate chips if desired.

Bake

Fill the muffin holes, then place the muffin pan in the center rack of the oven and bake for 5 minutes at 425°F (220°C), then reduce heat to 350°F (180°C) and keep baking for 15-20 minutes.
