Combine the dry ingredients in the bowl of your stand mixer: flour, almond flour, baking powder, baking soda, salt, sugar, and brown sugar.
Stir the batter with the paddle attachment until the dry ingredients are combined and pour the wet ingredients.
Whisk the batter to combine it evenly. Fold in the chopped almonds and stir again on low speed for a few seconds.
Form two large dough balls and place them on a baking sheet lined with lightly oiled parchment paper. Preheat the oven to 350°F (180°C).
Bake on the center rack of the oven for 30 minutes until the dough starts to crackle and the color is golden brown.
Cut the first-cooked biscotti into 1-inch slices and bake them again for 15 minutes at 325°F (160°C). Let them cool down and enjoy!
