INGREDIENTS

Cashew pasta cream sauce ▢ 1 ½ cup Cashews ▢ 1 cup Almond Milk ▢ 2 tbsp Nutritional Yeast ▢ 1 tsp Paprika ▢ 2 tbsp Lemon Juice ▢ ½ tsp Salt Mushroom Pasta ▢ 2 tbsp Olive Oil ▢ 300 g Mushrooms ▢ 1 tbsp Vegan Butter ▢ 2 Garlic Cloves ▢ 1 tbsp Parsley ▢ 1 cup Vegetable Stock ▢ 18 oz Cooked Pasta

Combine the Vegan Cashew Pasta Sauce ingredients in the jug of a blender.

Blend the Cashew Pasta Sauce at high speed until it is smooth and silky.

Cook sliced mushroom on olive oil in a large saucepan. Sprinkle dried parsley and let it simmer.

Add Vegan Butter, then the Vegetable Stock and Cashew Pasta Sauce. Stir and let it simmer.

When the creamy vegan mushroom sauce is ready, pour the cooked pasta and stir.
