Beat the dairy-free butter and sugar in a stand mixer with the paddle attachment before adding the vanilla, cornstarch, salt, almond milk, and baking powder. Beat and add the flour.
Shape the dough into two-disc of the same size and place them in a mixing bowl.
Wrap the Halloween Sugar Cookie dough discs with plastic wrap and transfer them to the refrigerator for about one hour of chilling time.
Use a Halloween Cookie Cutter (link in post below) to form sugar cookie shapes. Transfer the cookies to a baking pan lined with oiled parchment paper and bake them for 8-10 minutes at 350°F (180°C).
Make a batch of my vegan royal icing and use plant-based food coloring to make Halloween colors and decorate the sugar cookies with a spoon and a toothpick for the details.
