VEGAN MATCHA COOKIES

ALMOND FLOUR

INGREDIENTS

▢ 2 c Almond Flour ▢ 1 tbsp Matcha Powder ▢ ½ tsp Baking Powder ▢ ¼ c Maple Syrup ▢ ¼ c Coconut Oil ▢ ½ tbsp Vanilla Extract To decorate ▢ ⅓ c White Chocolate Chips ▢ 1 pinch Matcha Powder

Combine Dry Ingredients

In a medium-size mixing bowl, add all the dry ingredients: almond flour, Matcha powder, baking powder, and salt if used.

Add Wet Ingredients

Combine the ingredients with a spatula first, then stir in the wet ingredients: melted coconut oil and maple syrup until it forms a sticky green dough.

Roll Cookie Balls

Slightly grease hands with coconut oil, then scoop the dough - about 2 tablespoons per cookie - and roll into a ball between your hands.

Flatten the Cookies

Place each ball onto the lined cookie sheet leaving 1 thumb between each and use your hand palm to flatten each cookie.

Flatten the Cookies

Bake in an oven preheated to 325°F (160°C) for 10-12 minutes until slightly golden on sides and slightly hard on top.

Decorate the Cookies

Decorate with a drizzle of melted vegan white chocolate and add a pinch of Matcha powder to boost their Matcha flavor.
