INGREDIENTS

Vegan No-Bake Bars ▢ 1 cup Rolled Oats ▢ ½ cup Coconut ▢ 3 tbsp Flaxseed Meal ▢ ¼ tsp Salt LIQUID INGREDIENTS ▢ ¾ cup Peanut Butter ▢ ½ cup Maple Syrup ▢ 1 tsp Vanilla CHOCOLATE GANACHE ▢ 3.5 oz Dark Chocolate ▢ 1 tbsp Peanut Butter ▢ 2 tbsp Coconut Oil

In a large mixing bowl, combine all the Oatmeal Vegan No-Bake Bars base dry ingredients. Set aside.

In a microwave-safe bowl or medium saucepan, combine fresh runny peanut butter, maple syrup, and vanilla. Microwave the bowl until smooth.

Pour the dry Vegan No-Bake Bars ingredients into the wet ingredients. Combine with a spatula to incorporate all ingredients together and form a sticky batter.

Press the vegan bar base all over a square pan lined with lightly oiled parchment paper. Use a spatula to smoothen the layer and spread the batter evenly.

In a small mixing bowl, combine the chocolate, peanut butter, and coconut oil. Microwave the batter in 30-second bursts, stir, and repeat until it's fully melted.

Pour the chocolate ganache on top of the vegan no-bake bar base and spread it evenly with a spatula. Return to the freezer for 5-10 minutes or until the ganache is set.

Slice the Vegan No-Bake dessert into 16 oatmeal bars and store them in the fridge in an airtight container for up to 1 week.
