▢ ¼ cup Coconut Oil ▢ ⅓ -1/2 cup Coconut Sugar ▢ 3 tbsp Almond Milk ▢ 2 tbsp Cocoa Powder ▢ ⅓ cup Peanut Butter ▢ 1 tsp Vanilla ▢ ¼ tsp Salt ▢ 1 ¼ cup Old-fashioned Rolled Oats ▢ ¼ cup Shredded Coconut
In a medium-size saucepan, add sugar, unsweetened cocoa powder, and almond milk. Bring to medium heat.
Add Peanut Butter
Remove from heat and stir in natural peanut butter, vanilla extract, and sea salt. Stir until well combined.
Stir in rolled oats and coconut if using. Stir well to evenly cover the dry ingredients with the melted chocolate mixture.
Scoop some batter onto the prepared cookie sheet. The batter is pretty loose, but it will firm up in the freezer.
Freeze the cookie sheet for 15 minutes or until the cookies are hard and set.
