Vegan Pecan Pie ▢ 1 ½ cup Pecan ▢ ½ cup Almond Milk ▢ ¾ cup Maple Syrup ▢ ½ cup Coconut Sugar ▢ 6 tbsp Flaxseed Meal ▢ ½ tsp Ground Cinnamon ▢ 1 ½ tsp Vanilla Extract ▢ 2 tbsp Coconut Oil ▢ 1 Vegan Pie Crust

Before making the Pecan Pie filling, make the Vegan Pie Crust

Vegan Pecan Crust ▢ 1 ½ cup Fine Almond Flour ▢ ½ cup Arrowroot Flour ▢ 3 tbsp Lukewarm Water ▢ 2 tbsp Coconut Oil

In the food processor bowl, combine all the crust ingredients.

Stop the processor when the dough is well combined.

Knead the gluten-free dough with your hands and make a large dough ball.

Either roll the dough with a rolling pin or press it directly in the pan.

Press the gluten-free vegan pie crust on the edges of your pie pan.

Prick the pie crust with a fork and prebake it for 8 minutes at 350°F (180°C).

Combine the pecan filling ingredients in a saucepan. Stir until the mixture boils and simmer for a few minutes.

Spread the chopped pecans on the prebaked gluten-free pie crust.

Pour the hot pean pie filling on the pecan nuts. Cover them evenly.

Bake the Vegan Pecan Pie for 30-40 minutes at 350°F (180°C).
