Place your bottle of maple syrup and mixing bowl in the fridge overnight or at least 3 hours before making.
In the refrigerated mixing bowl, add olive oil, maple syrup and use a handheld milk frother to froth on high speed to form a thick caramel. You can also use a small hand whisk or a fork, but it will not get as thick as if you use a high-speed mixer like a milk frother or blender. For a blender option you need to triple the recipe or the volume will be too small to blend well.
If you like, stir in vanilla extract, and a pinch of salt now.
Serve on top of ice cream or cake. The caramel gets even thicker in contact with frozen food. Recipe serve 8 tablespoons.
Notes
Note 1: Make sure the maple syrup is very cold - I pop my bottle in the fridge overnight t get the thicker caramel. Also, use grade A maple syrup, the recipe won't work with sugar-free syrup made of water and artificial sweeteners.Note 2: Pick an extra light olive oil to decrease the olive oil flavor in your caramel, if you are not a big fan of it. I love olive oil on ice cream and pick a medium-grade olive oil but it's up to you to pick your favorite.Volume: You can double or triple the recipe. The goal is to keep an equal amount of maple syrup to olive oil. The bigger the volume, the better you can froth in a blender. Storage: Store in a sealed glass mason jar in the fridge for up to 5 days.Serving: Serve on ice cream, milkshakes, or cakes.
