Coconut-Free - Replace the coconut sugar with brown sugar and coconut oil with plant-based butter.
Oil-Free - I didn't try replacing oil in this recipe. Mashed banana or applesauce might work, providing a different texture.
Storage
Store the cookies in a cookie jar in the fridge for up to one week or freeze them in an airtight container for up to one month.
Oven Mode: I use the fan-forced (convection) mode of my oven. If you have to use conventional mode, I recommend increasing the temperature by 25°F (15°C). The baking time should be the same, but it might take a few more minutes.
