In a small mixing bowl, combine creamy peanut butter, maple syrup, almond flour, and mini chocolate chips until it forms a smooth cookie dough.
If you like, stir in 1 teaspoon vanilla extract, and pinch of salt, stir to evenly incorporate.
Refrigerate the dough for 10 minutes, then roll it into 10 balls of the same size - it's about 1 1/2 tablespoons per bite.
