Magdalenas de zanahoria y puré de manzana
Ingredientes
- 1 taza de Salsa de manzana sin azúcar - (nota 1)
- ¼ taza de Leche de almendras sin azúcar - (nota 2)
- ½ taza de Aceite de oliva de sabor suave - (nota 3)
- 2 cucharaditas de Extracto de vainilla
- ½ taza de Azúcar de coco - (nota 4)
- 2 tazas de Harina para todo uso - (nota 5)
- 2 ½ cucharaditas de Levadura en polvo
- 2 cucharaditas de Canela
- ¼ cucharadita de Salt - opcional
- 1 taza de Zanahoria rallada - or pulsed in a food processor in bits
- ½ taza de Pasas secas - (nota 6)

- Preheat the oven to 350°F (180°C). Line a 12-hole muffin pan with muffin paper cups and spray the liner with oil to prevent the muffins from sticking to the paper. Set aside.
- In a mixing bowl, add applesauce (smooth, not chunky), almond milk, olive oil, vanilla extract, and coconut sugar. Whisk to combine.
- Add the remaining ingredients: all-purpose flour, baking powder, cinnamon, salt, shredded carrots, and dried raisins.
- Using a rubber spatula, stir the ingredients until just combined.
- Divide the batter evenly into the paper liners.
- Bake the muffins on the center rack of the oven for about 35-45 minutes at 350°F (180°C) until a pick inserted in the center of the muffins comes out clean.
- Let them cool for 5 minutes in the pan, then transfer them to a cooling rack and cool for a few hours to enjoy their best texture.

Probably, the baking time will consequently increase to around 45-55 minutes
We’re watching potassium and phosphorus. Carrots must be leached,soaked thinly sliced carrots in water several hours and rinsed before cooking. Can cooked carrots be used in this recipe. Will need to omit the raisins as hubby is diabetic.
I haven’t tried that, I guess you can add cooked grated carrots, btu they will get mushy, and they will also release more moisture to the batter making the crumb gummy.

I just baked a batch and have three extra large muffins in addition to the 12. The regular size muffins were done in half hour. I didn’t have coconut sugar so substituted light brown sugar. they look and smell great!
