I love making easy, healthy recipes with Weetbix and turn this classic New Zealand breakfast into a range of delicious recipes, like my Torta Weetbix senza cottura, WeetBix Bliss Balls, o Frullato WeetBix. I have already made an Weetbix per la notte, but since I had plenty of carrots, I decided to make a winter-friendly Carrot Cake version of that recipe!
It’s an easy twist on the traditional overnight oats. It’s still full of wholesome, simple ingredients, but it brings the same flavors as my Avena notturna con torta di carote, but in a typical kiwi breakfast that you can meal prep for a whole week!

Torta di carote con Weetbix preparato la sera prima
Ingredienti
- 2 Weetabix - or Weetbix, crushed
- 1 cucchiaino da tè I semi di Chia
- ⅓ bicchiere Latte di mandorla
- 1 cucchiaino da tè Sciroppo d'acero - or 1-2 stevia drops
- ½ bicchiere Carote grattugiate
- ¼ cucchiaino da tè Cannella
- 1 cucchiaio Cocco grattugiato (non zuccherato)
- 2 Noci - tritato
Yogurt Protein Topping
- ½ bicchiere Yogurt senza lattosio
- 1 cucchiaio Proteine in polvere alla vaniglia
- 1 cucchiaino da tè Sciroppo d'acero
Istruzioni
- In a glass airtight container, crush 2 Weetabix biscuits with your hands until they form a thin crumb.
- Add chia seeds, almond milk, maple syrup, carrot, cinnamon, coconut, and chopped walnuts.
- Stir and spread evenly all over the container. If too thick, add an extra tablespoon of almond milk. It should form a paste, not be too liquid.
Yogurt Protein Layer
- In a mixing bowl, stir the yogurt and protein powder. If you don't want to use protein powder, skip it and stir in maple syrup.
- Spread the yogurt layer on top of the Weetabix layer.

- Cocco grattugiato – I prefer for unsweetened shredded coconut to make it easier to balance the sweetness. Chopped nuts or seeds can be used instead.
- Noci – Choose raw, unsalted walnuts. Pecans or almonds make good alternatives.
- Yogurt vegano – Select a thick, unsweetened plant-based yogurt. Coconut cream can be used as an alternative.
- Proteine in polvere alla vaniglia – Choose a high-quality vegan protein powder. It can be omitted or replaced with vanilla extract and a sweetener.
How to Make Carrot Cake Overnight Weetbix
This recipe is as easy to make as other overnight Weetbix recipes!

Crush the Weetbix cakes into a large container.

Add all the other overnight Weetbix ingredients.

Stir the mixture into a smooth layer in the container.

Add the protein yogurt mixture on the top and more grated carrot.
