- In a mixing bowl, whisk together unsweetened almond milk, vinegar, syrup, vanilla, and oil. Set it aside.
- In another large mixing bowl, stir together all the dry ingredients: buckwheat flour, baking soda, and baking powder. Make a well in the center and pour the liquid ingredients in the middle.
- Whisk until it forms a smooth, slightly thick batter with no lumps.
- Warm a pancake griddle under medium heat with a little olive oil or coconut oil.
- Pour 1/4 cup of batter onto the warm oiled griddle. Use the back of a spoon if needed to spread batter into a lovely round-shaped pancake.
- Cook until bubbles form on top and sides are set and dry – about 2 минут, then slide a spatula under the pancake and flip on the other side. Cook for an extra 30 seconds on this side.

Super easy to make and delicious. I made these as waffles and they were great!
For the purpose of lowering the glucose index in these pancakes, would the recipe work if the rice syrup/maple syrup was replaced with some liquid or powdered Stevia (equivalent to 4 tbls sweetness), combined with the balance in water ie to make up 2 tbls of liquid? Would the different consistency be a problem with the overall consistency of the pancake mix? With thanks for any responses received – maybe even from someone who has used Stevia?
You can definitely skip the syrup, the pancakes will still hold their shape pretty well without adding any other liquid. As a low-sugar sweetener you can use 1-2 tablespoons of allulose, a few drops of stevia, or Erythritol/Monk fruit blend.
Recipe is very simple and easy to make. Pancakes are a bit bland though. Would suggest adding some banana to the mix to increase the flavor.

Made 18 1/2 pancakes using 1/4 cup measuring cup.
Made some modifications based on reviews and what I have.
Added 10 TBL flax meal with water to compensate, subbed cashew milk, subbed applesauce for oil, added a teaspoon more vanilla, and a little salt.
The flavor by itself is a bland, but toppings are flavorful.
My family liked the butter and maple syrup. And I loved the banana, almond butter and maple syrup (as another reviewer suggested!).
