Mansikka-banaani-kaurapuuromuffinssit
Ainekset
- 1 ⅓ kuppi Muussatut kypsät banaanit - noin 3 keskikokoista banaania
- 2 teelusikallista Sitruunamehua - tai omenaviinietikkaa
- ¼ kuppi Makeuttamaton mantelimaito - tai mitä tahansa kasvipohjaista maitoa
- ⅓ kuppi Sulatettu kookosöljy - tai mitä tahansa kasviöljyä
- 2 teelusikallista Vaniljauute

- 1 kuppi mansikat - finely diced, fresh or thawed
Ohjeet
- Kuumenna uuni 180°C:een. Vuoraa 12-kuoppainen muffinivuoka muffinipaperivuokilla ja suihkuta vuokaan kevyesti öljyä, jotta muffinitaikina ei tartu siihen kiinni.
- Kuori ja muussaa banaanit ja mittaa reseptissä tarvittava määrä muussattuja banaaneja. Laita ne sitten suureen kulhoon.
- Yhdistä muussattu banaani, sitruunamehu, mantelimaito, sulatettu kookosöljy (haaleaa, ei polttavan kuumaa!), kookossokeri ja vaniljauute. Sekoita, kunnes kaikki on hyvin sekoittunut. Laita sivuun.
- In another mixing bowl, whisk together flour, rolled oats, baking soda, baking powder, and salt.
- Stir the dry ingredients into the wet and pour in the finely diced strawberries. If yours are thawed, discard juice released or the muffins will be too moist.
- Fill the muffin cases up to 3/4 their level and sprinkle extra rolled oats on top if desired.

It’s very simple to whip a batch of these banana bread muffins with strawberries.

These strawberry muffins are even more delicious with 1/3 cup of some of the following ingredients. Fold in the muffin batter, in the end, just before filling the muffins cases.
- White chocolate chips – many varieties are dairy-free, otherwise use dark chocolate chips.

The great thing about this muffins recipe is that you can absolutely use any other berries in it!
If you don’t have strawberries, try to replace them with:

How To Make Strawberry Banana Oatmeal Muffins
- First, select ripe bananas to ensure the muffins are sweet enough. Peel the bananas and place them in a large mixing bowl.
- Mash with a fork or potato masher until almost no lumps shows.
- If you use fresh strawberries, cut off their stem and wash them under cold water.
- Pat them dry in a clean towel and chop them into small pieces. You can also use frozen strawberries, thaw a few hours before making the recipe, cut them thinly, and discard the strawberry juice released.
- Preheat the oven to 350 °F (180 °C). Line a 12-hole muffin tin with paper cases.
- Lightly spray sine cooking oil in each paper liner to prevent the muffin batter from sticking to the paper. Set the muffin pan aside.
- Stir in the wet ingredients into the bowl with the mashed bananas: melted coconut oil, almond milk, lemon juice, vanilla extract, and sugar of your choice.
- Whisk to bring all ingredients together.
- Fold in the dry ingredients on top: flour, old-fashioned rolled oats, baking powder, baking soda, salt, and stir to combine and form a consistent thick muffin batter.
- In the end, fold in the finely diced strawberries and stir to just combine. Don’t over mix the batter to keep the muffin light and fluffy.
- Sprinkle oats on top of each muffin before baking and some extra pieces of strawberries if you like.
- Press them slightly on top to make sure they hold onto the muffin batter.
- Place the batter into the prepared muffin tray. Usually, you need about 1/4 cup of batter to fill each muffin case.
- Bake the muffins on the center rack of the oven for about 30 minutes at 350 °F (180 °C). You know the muffins are cooked through when a toothpick inserted in the center comes out clean. If too wet or sticky, keep baking the muffins. You can add a piece of foil on top of the muffin pan to prevent the muffins from darkening too fast.
- Cool the muffins for 5 minutes in the pan, then transfer onto a cooling rack to fully cool down at room temperature.

I swapped applesauce for the oil and subbed 1/4 cup protein powder and used 1 cup flour. Texture still turned out great. They are good but seriously lacking spice per my 12 yr old twins and I. Next time we are going to add some cinnamon and nutmeg.
Tried these first with recipe as is – perfect. Then tried again with bob’s red mill 1 to 1 GF flour and it was a total fail. What am I doing wrong? Muffins were very gooey and flat, even after cooking for almost double the time.
Trying now with whole wheat white flour. Hoping it goes well!
My recipes are tested with regular flour, so I can’t guarantee that all-purpose gluten-free flour blend deliver the same texture and result. Unfortunately, gluten-free flour brands are all so different that I can’t tell which one will provide the same texture as regular wheat flour. In general, GF flour always makes baked good dense an gummy because of their high starch level.
Could I use oat flour instead here? (was also going to use applesauce instead of oil) Thanks, looks delicious!
I am not sure about oat flour because the muffins are very moist with the strawberries inside and I am worried that they won’t hold their shape with oat flour instead of all-purpose.
This is a wonderful recipe! Love the combination of banana and strawberries. I left out the sugar, and used gluten-free flour. I was also lazy and mixed everything in one bowl, and the muffins still turned out great!

I made them with no oil used applesauce and instead of strawberries I had fresh/frozen cranberries from thanksgiving leftover so I used them. Love the tartness from the cranberries. They turned out great without the oil
