You only need a few ingredients to make this oat flour banana bread. First, make sure you follow my tutorial to make your own homemade oat flour. This saves time and money!
- Kypsät banaanit – pick the ugly ones with black spots on the skin. I prefer darker bananas. It makes the bread sweeter.
- Kaurajauho – I am using ultra-fine gluten-free homemade oat flour.

- Pellavansiemenmuna – stir the flax meal with lukewarm water, and set it aside for 10 minutes until it forms an egg-like texture. This acts as an egg replacer in your vegan banana bread.
- Light Brown Sugar – or coconut sugar. A great unrefined sugar to give a caramel flavor and golden brown color to baking. Also, the Glycemic Index of coconut sugar is lower than brown sugar, and consequently, it releases a steady level of energy throughout the day.

How To Make Vegan Gluten-Free Banana Bread
- First, peel off the bananas, place them on a chopping board, and mash them with a potato masher or a fork.
- Measure precisely the amount of mashed banana to make the bread come out moist and hold its shape.
- Vegan banana bread made with oat flour depends even more on the amount of banana to hold its shape.
- Prepare the loaf pan, line the bottom and sides with parchment paper, and oil with coconut oil. Set it aside.
- In a large mixing bowl, whisk together mashed bananas, melted coconut oil, flax egg, light brown sugar, and vanilla extract.
- Then, stir the dry ingredients: gluten-free oat flour, rolled oats, baking powder, baking soda, and cinnamon. The banana bread batter should be thick and heavy.
- Transfer the banana bread batter into an 8-inch x 5-inch loaf pan covered with oiled parchment paper.
- Bake on the center rack of the oven preheated to 350°F (180°C) for 55-65 minutes until a pick inserted in the center comes out clean.
- Cool the banana bread down on a cooling rack for 2-3 hours or until it reaches room temperature.
- Slice the bread once it’s at room temperature, not before, or the texture will be too dense and heavy.

- Preheat the oven to 350°F (180°C). Line an 8-inch x 5-inch loaf pan with parchment paper. Set aside.
- Prepare the flax egg by whisking the flaxseed meal and lukewarm water. Set aside for 10 minutes until a gel-like texture forms.
- Peel the 3 ripe bananas, mash them with a potato masher or a fork and measure 1 cup + 1/4 cup of mashed bananas.
- In a large mixing bowl, add mashed bananas, flax egg, melted coconut oil, vanilla, and light brown sugar. Stir to combine.
- Stir in old-fashioned rolled oats, cinnamon, baking powder, baking soda, and oat flour.
- Stir in chopped walnuts if desired and combine in the batter with a spoon.
- Pour the banana bread batter into the prepared loaf tin.
- Bake at 350°C (180°C) for 55-65 minuuttia or until golden brown and a skewer inserted in the center of the bread comes out clean or with few crumbs. You can tent the loaf pan after 30 minutes with a piece of foil to avoid the top to brown too fast.
- Cool in the tin for 10 minuuttia, then lift out the bread from the pan using the hanging pieces of parchment paper
- Cool the banana bread on a rack for 3 hours or until it reaches room temperature before slicing.
- Slice the bread into 12 slices once it has cooled to room temperature. Store in the fridge in a sealed box for up to 4 days or freeze for later.

No, you can’t replace a granulated sweetener by liquid sweetener. The bread will come out gummy.

I made this bread yesterday. I chose this recipe because of the oat flour and other ingredients I already had on hand. The only change I made was to to add one egg. Very tasty banana nut bread recipe. I’ll be making again and for another variety I’ll add dried cranberries.
I made these into muffins and they came out perfect! I used organic sugar instead of brown sugar (didn’t have brown) and avocado oil instead of coconut. Perfect. Kids loved them.
Hello the video shows milk being used but this is not in the recipe or method listed
Recipe has been updated since I made the video, the almond milk has been skipped for best texture!
Some changes I made due to circumstances:
· 1/4 c of sugar (half brown sugar and light brown crystal sugar)
· 1 tsp of cinnamon to make up for sweetness + I like cinnamon
· 1/4 c of desiccated coconut instead of nuts because I didn’t have nuts
· a chicken egg instead of a flax or chia egg because I can’t eat flax due to meds and I’ve had a chia egg banana bread recipe turn out like rubber in the past (Yes, I know it’s not vegan. I’m a vegetarian.)
· baked in a 9 by 8 inch cake pan for 30 mins because I don’t have a loaf pan, and placed a sheet of foil on top around the middle of baking time to prevent too much browning since I bake in a convection oven.
It smells delicious in my home and from what I’ve tried while it’s fresh out of the oven, it’s deeeelicious!
