Ramuan
- ¾ cawan Kelapa Kering Tanpa Gula - (nota 1)
- 1 cawan Tepung Badam - (nota 2)
- 2 sudu makan Santan - (nota 3)
- ⅓ cawan Sirap maple - (nota 4)

- ¼ sudu teh Ekstrak Kelapa
- 2 sudu makan Kelapa Kering Tanpa Gula
- 9 Badam Bakar
- ⅓ cawan Cip Coklat Gelap - dicairkan

- In a mixing bowl, add coconut, almond flour, maple syrup, coconut milk, and coconut extract, if used.
- Stir with a rubber spatula at first, then lightly oil your hands and squeeze the dough to bring everything nicely together. If too dry, add a bit more milk. If too wet, add a bit more almond flour. You should be able to roll a ball from the dough. The dough is soft, wet, but roll well in lightly oiled hands.
- Lightly oil hands and roll about 1 1/2 tablespoons of dough. Repeat until no more dough is left – I made 9 energy balls in total.
- Place the extra 2 tablespoons of unsweetened desiccated coconut in a small bowl, place the rolled energy balls, and roll to coat with coconut.
- Press a whole roasted almond on the top of each ball. They will flatten a bit, so re-roll them between your hands to encase the almond and reshape into a perfect round shape.
- Melt the chocolate chips in a microwave-safe bowl in 30-second bursts, and drizzle them on top of the balls.
- Place the balls in the freezer for 10 minutes to set the chocolate.
- Place the energy bites in an airtight container and refrigerate for up to 5 days.

- Tepung Badam – This forms the base of the balls, giving them body and a rich, nutty flavor. For a nut-free version, you can also use oat flour, but it absorbs more liquid, so you will need to adjust the amount.
- Santan – The coconut milk adds moisture and helps bind all the ingredients together. It also boosts the coconut flavor. Other plant-based milks like almond milk or soy milk work as well.
- Sirap maple – This provides the sweetness to the energy balls. Any other liquid sweetener, such as agave syrup or coconut nectar, is also a fine substitute.

Let me share a few more tips for a perfect almond joy balls.
- Perfectly Round Balls – When you are rolling the energy balls, lightly oiling your hands with a bit of coconut oil will prevent the dough from sticking and helps you get a smooth, perfect shape every time.
- Melaraskan Konsistensi – If your dough is too dry and crumbly, you can add a tiny splash more of coconut milk. If it’s too wet and sticky, a little extra almond flour will help firm it up.
- Chocolate Shortcut – Instead of melting and drizzling chocolate on top, you can just stir a quarter cup of mini chocolate chips directly into the dough. This saves a step and ensures every bite has chocolate.
- Bahan-bahan Terbaik – Using ultra-fine almond flour will result in the smoothest texture and a lighter color. If you use almond meal, the balls will be a bit grainier and darker.
