Roti Zaitun
Ramuan
- 2 cawan Tepung Naik Sendiri - (nota 1)
- ½ cawan Susu badam - (nota 2)
- 2 sudu makan Minyak Zaitun Perisa Ringan - (nota 3)
- ⅓ cawan Yogurt Bebas Tenusu - (nota 4)
- 1 sudu teh Rosemary Segar - chopped, equivalent 1/2 teaspoon dried rosemary
- ⅓ cawan Kenari - dicincang halus (nota 5)
- ½ cawan Zaitun Hijau - sliced, or roughly chopped (note 6)
- ½ cawan Zaitun Hitam - sliced, or roughly chopped (note 6)
- ½ cawan kalamata - sliced, or roughly chopped (note 6)
Optional as olives are often stored in salty brine!
- ¼ sudu teh Garam

- Panaskan ketuhar hingga 400°F (200°C). Alas dulang pembakar dengan kertas parchment. Sapukan sedikit minyak pada kertas pembakar dengan semburan minyak masak. Ketepikan.
- Chop the whole olives on a chopping board, using a long sharp knife. The size doesn't matter, you can slice or roughly chop, as you prefer. Set aside.
- In a mixing bowl, add the self-rising flour, almond milk, oil, yogurt, fresh rosemary, chopped walnuts, and chopped olives.
- Use a rubber spatula to stir the ingredients together. The batter is heavy and sticky; that's normal. Stir and press/push with the spatula to bring everything together. If too wet, add a little extra flour, but remember, it should stay sticky it's not a bread dough that you form by hand.
- Use the rubber spatula to push down the sticky dough on the baking sheet.
- Oil your hands and pat the dough, to shape the ball into an oval. The shape you give matters. If it's too tall, it takes longer to bake, which is why it's better not to use a loaf pan. Shape your loaf into an 8-inch x 2-inch (20 cm x 5 cm) log.
- Bakar roti selama 35 minit di rak tengah pada suhu 400°F (200°C), kemudian turunkan suhu kepada 350°F (180°C) selama 10-12 minit sehingga bahagian luar berwarna perang keemasan dan pencungkil yang dicucuk keluar bersih.

- Susu badam – This adds the liquid hydration needed to bring the dough together. You can easily use soy milk or oat milk instead.
- Minyak Zaitun Perisa Ringan – This adds moisture to the crumb and helps crisp up the crust. You can swap this for a garlic-infused oil to add a savory kick.
- Yogurt Bebas Tenusu – This is a crucial ingredient because the acidity in the yogurt reacts with the baking powder in the flour, helping the bread rise and stay fluffy.
- Rosemary Segar – This adds a beautiful, piney aroma that pairs classically with olives.
- Kenari – These provide a nice crunch and texture contrast to the soft bread. If you want a nut-free version, pumpkin seeds or sunflower seeds work well.
- Olives (Green, Black, Kalamata) – These provide the main flavor punch and savory saltiness. I recommend using a mix of all three for the best taste.
- Garam – This is optional. Since olives are cured in brine, they are already quite salty, so you likely won’t need this extra pinch.

Hello can this be made with roasted garlic and half the olives?
You can decrease the amount of olives for sure, roasted garlic is very potent but if you like the flavor, why not!

Would whole wheat flour work?
It will be dryer, denser, and there’s few more adjusteent you will have to make. 1 cup self-rising flour equivalent to 1 cup wholewheat flour + 1 1/2 teaspoon baking powder + a little more water. You will also need to rest the batter 15 minutes before baking to give time to the fibers to absorb the liquid.
We make it a lot in Cyprus but your version looks delicious too, I’ll try it! Here we add onion, mint and coriander
