My kids love air-fryer donut recipes! We made many flavors: 2-ingredient donuts, lemon donuts, ou bolinhas de donut de banana and even the surprising Donuts de batata-doce. They are all way tastier than deep fried donuts.
The air fryer puffs the dough even more than the oven, creating a fluffy, soft donut every time. To create these air fryer donut holes, I used the same base recipe as for the 2-ingredient donuts. Then, I experimented with air fryer baking times and temperatures because donut holes are smaller than donuts and air fry faster.

Ingredientes
Massa com 2 ingredientes
- 1 ¾ xícara Farinha Auto-Crescente - (note 1) +3 or 4 tablespoons to shape dough
- 1 xícara Iogurte vegetal com sabor de baunilha - (nota 2)
Para cobrir os donuts
- 3 colheres de sopa Açúcar de cana não refinado
- 1 colher de chá Canela
- ¼ xícara Manteiga sem lactose (sem sal)
Para trabalhar a massa
- 1-2 colheres de sopa Óleo de coco derretido - (nota 3)
To fill (optional)
- ⅓ xícara Geleia de morango
Instruções
- Em uma tigela grande, misture a farinha com fermento e o iogurte de baunilha.
- Stir with a rubber spatula at first until the dough forms lumps and pieces. Now, generously oil your hands with a light-flavored oil (canola or avocado oil) and knead the dough until it forms a soft and elastic ball. The oil fixes the dough's stickiness and adds elasticity.
- Place the dough on a lightly-floured surface. If it's really too soft or sticky, add up to 3-4 tablespoons of flour, not more, or the doughnuts will be bready and hard.

- Grease the air fryer basket with oil spray and place the donut holes in it, far from each other, as they expand a lot. Spray oil on the donut holes. If you can't fit them all at once in the basket, keep the remaining donut holes on a baking sheet covered with parchment paper at room temperature to air fry later.
- Air fry the first batch at 350°F (180°C) for 8-9 minutes. If they are still white in color, shake the basket and air fry for an extra 3-4 minutes. They should puff, get golden brown, and look dry like little bread rolls.
- Remove the cooked donuts from the air fryer, and air fry the second batch following the same instructions as above. Let the donut holes cool down on a wire rack for a few minutes.
- Meanwhile, fill a bowl with sugar and cinnamon. Stir to combine. Set aside.
- In another bowl, add plant-based butter and melt in the microwave in 20-second bursts. Set aside at room temperature.
- Brush the lukewarm donut holes with melted plant-based butter, then roll them into a bowl filled with cinnamon and sugar to coat.
- To fill them, fill a syringe with jam, insert the syringe on one side of the donut hole, and push slowly to fill in. When the jam comes out, stop filling the donut. You can fill on many sides of the holes to add more jam to the donut.

- Iogurte natural or vanilla-flavored yogurt – You can use any yogurt you like. For a sweeter dough, I recommend using vanilla-flavored yogurt. I always bake with dairy-free yogurt and tested the most popular vegan yogurts like coconut yogurt, cashew yogurt, and oat yogurt. I can guarantee that any yogurt provides good results in this recipe.
- Farinha Auto-Crescente – This is made by mixing 1 cup of flour with 2 teaspoons of baking powder. I like to use store-bought mix, so it’s quick and easy to bake donuts without yeast. For a gluten-free option, use my conversor sem glúten, Mas não se esqueça do fermento em pó.
How To Make Air Fryer Donut Holes

- To make the donut hole dough, add self-rising flour and yogurt in a large bowl.
- Use a rubber spatula to stir these ingredients together until it forms pieces and lumps of four.

- Now, oil your hands and knead the dough to form a ball. It will be sticky, which is normal. Form a ball, but don’t over-add flour—add a maximum of 3-4 tablespoons if you need to rub your hand with flour to unstick the dough, but that’s it. Adding too much flour turns the dough hard and the donuts bready like bagels.
- Then, when you manage to shape a sticky rough dough ball, wash your hands, dry, and grease generously with light olive oil or melted coconut oil.
- Spray oil on the dough ball and fold it a few times. As your hands are oily and the dough is oiled, the dough becomes shiny, elastic, and less sticky.

- Place the dough on lightly floured surface. Divide the dough into 12 donut holes – each the size of a golf ball.

- Spray cooking oil spray in the air fryer basket, place the donut hole in a single layer in the basket leaving a thumb space between each. You don’t want the donut holes to touch each other and they will expand in the air fryer so make sure they are far from each other.

- Spray oil on the donut holes and air fry them at 350°F (180°C) for 8 to 9 minutes. After that time, shake the basket and if the donuts are still light in color, white, not golden, return them for 4-5 minutes at same temperature.

- The donut holes are ready when they have a nice golden brown color and they puff.
- Let the air fryer donuts cool down on a cooling rack while preparing the cinnamon sugar coating.
Coating The Donuts

- In a small bowl, whisk sugar and cinnamon. You can add any spices you like, including pumpkin spices, nutmeg, or ginger.
- Using a pastry brush, brush the donut hole with vegan melted butter, or avocado oil on the donut holes.

- Then, roll each donut hole into the cinnamon sugar mixture to coat. You can also simply sprinkle powdered sugar on top.
- If you want to fill the donuts with jam as seen on my picture, pick your favorite jam or make a batch of my geleia de sementes de chia.

- Fill a piping bag with a small nozzle, or use a syringe to fill with jam.

- Dip the nozzle on the side of the donut hole and push in the jam slowly, stop when the jam comes out.
- To evenly fill the doughnut hole, repeat the filling on a few sides of the donut hole.

This donut dough is sticky, which is normal. You shouldn’t add too much extra flour—a maximum of 3-4 tablespoons. The dough’s stickiness should be fixed by using cooking spray or light flavor oil that you rub on the dough ball and working the dough with generously oiled hands until it is soft and elastic.
