This High Protein Yogurt Parfait is a simple, creamy, plant-based dessert that brings almost 27g of protein in only 15 minutes!
When I’m looking for a quick snack that I can put together in a few minutes, and that is rich in protein, I normally go for Banana Protein Balls, a Mango Protein Smoothie, or Protein Cookie Dough. But when I’m doing my meal prep, I go for this protein parfait.
It’s such a quick recipe that is full of flavor and loaded with goodness. With a bit of practice, I can now make it in under 5 minutes.
Ingredients and Substitutions
- Raspberries and Blueberries – I love this combination of fresh fruit, but you can also use strawberries, blackberries, or boysenberries. Prefer fresh above frozen fruits.
- Vegan Yogurt of Choice – I like to use soy yogurt to have as much protein as possible, but other yogurt also work.
- Vanilla Protein Powder – I tried this with Nuzest and MicroMike (which are pea and almond-based protein powder) and it worked fine with both.
- Powdered Peanut Butter – It works with PB2 or MacroMike’s powdered peanut butter, but you can also use regular peanut butter or just more protein powder.
- Maple Syrup – Any unrefined liquid sweetener, like agave syrup or coconut nectar work.
- Granola – You can make your own high-protein granola or buy a commercial version.
- Vegan Dark Chocolate Chips – I like my chocolate chips over 70% cocoa, but you can use any plant-based chocolate chips.
- Coconut Oil – To melt the chocolate chips. You can also use avocado oil.
How To Make High Protein Yogurt Parfait
Making this recipe is super easy with my recipe further down, but I’ve included photos of the key steps below.
Combine the plant-based yogurt and protein powder in two bowls.
Incorporate powdered peanut butter in both bowls and raspberries in one of them to make the yogurt pink.
Place some fresh berries in the jars and pour the peanut yogurt mixture on top.
Add more fresh fruits and a layer of pink yogurt. Top with more berries and protein granola.
Meal Prep Tips
This protein parfait recipe is perfect for your meal-prep as you can make 3 to 5 jars and keep them in the fridge until you eat them.
They’re super quick to make so even if you didn’t make enough jars, you can quickly add one more!

High Protein Yogurt Parfait
Ingredients
- 1 cup Raspberries - 1/3 cup in each jar
- 1 cup Blueberries - 1/3 cup in each jar
For the Protein Yogurt Layer (3/4 cup per jar)
- 2 ¼ cups Dairy-Free Yogurt - 3/4 cup yogurt. Note 1
- 1 scoop Vanilla Protein Powder - Note 2
- 2 tablespoons Powdered Peanut Butter - Note 3
- 1 tablespoon Maple Syrup - Note 4
Toppings
- 2 tablespoons Protein Granola - or coconut chips, or sliced almonds
- ¼ cup Dairy-Free Dark Chocolate Chips
- 1 teaspoon Coconut Oil
Instructions
- Stir the yogurt and protein powder until smooth in two bowls.
- Add the powdered peanut butter and incorporate it.
- To make a pink layer, add raspberries (thawed or fresh) to one of the bowls and incorporate them.
- Fill each jar evenly with fresh berries, a layer of the yogurt mixture, a layer of the pink yogurt mixture, add more berries on the top, and top it all with granola.
- Prepare the chocolate shell, drizzle on top of each jar, sprinkle some chopped nuts or coconut, and freeze the jars for 10 minutes to set the toppings.
