These healthy apple pie bars are very similar but full of Fall spices to celebrate the cold weather with a sweet, healthy breakfast.

Batoane vegane cu fulgi de ovăz și mere
Ingrediente
- 1 ½ cupe Făină de ovăz de casă - sau făină universală sau făină de speltă
- 1 ¼ cupe Fulgi de ovăz
- ⅓ ceaşcă Sirop de arțar - sau sirop de agave sau orez
- ⅓ ceaşcă Ulei de cocos - topit
- ¼ linguriță Sare
- ½ linguriță Vanilie
Compot de mere
- 3 ½ cupe Mere feliate - about 3 crunchy apples like Jazz or Honey Crisp apples (340g)
- 3 linguri Sirop de arțar - or agave or date syrup
- 2 linguri Suc de portocale - sau apă
- 1 linguriță Scorţişoară
- ¼ linguriță Nucşoară
- 2 lingurițe Amidon de porumb - or Arrowroot flour
Vegan peanut butter caramel
- ¼ ceaşcă Sirop de arțar
- ¼ ceaşcă Ulei de cocos - use refined coconut oil to avoid coconut flavor!
- 3 linguri Unt de arahide (nesărat) - sau unt de migdale
Instrucțiuni
- Preîncălziți cuptorul la 180°C (350°F). Tapetați o tavă de copt de 8 x 8 cm cu hârtie de copt. Dați deoparte.
- Într-un bol mare, combinați toate ingredientele pentru crustă: făina de ovăz, fulgii de ovăz, siropul de arțar, uleiul de cocos topit, sarea și vanilia.
- Squeeze the batter with your hands to bring all the ingredients into contact and create a dough that sticks together. If too dry (may happen if you are using a coarse oat flour), add 1-2 tablespoons of water, one at a time, until the dough is soft and sticks together.
- Press roughly 1 cup + 2/3 cup of the dough all over the baking dish, using a spatula to smooth the dough and making sure there is no hole left. Set aside leftover dough in a small mixing bowl in the fridge. It looks small, but it will be enough to finely crumble on top of the bar.
- Place the pan in the fridge while you make the apple filling.

- In a small saucepan, add the sliced apples, maple syrup, orange juice (or water), cinnamon, nutmeg.
- Cook for 2-3 minutes on medium heat, cover the saucepan, and stir often. Bubbles should form on the side of the pan.
- Stir in cornstarch and keep cooking on low heat for 2 minutes, stirring all the time to prevent the apples from burning. It should slightly thicken.
- Pour the apple filling on top of the prepared crust, then use the remaining dough to crumble all other the bar.

Peanut butter caramel
- Meanwhile, make the caramel. In a small saucepan, melt coconut oil with maple syrup and peanut butter over low-medium heat.
- Stir constantly until melted and combined and it looks like a caramel sauce.
- Set aside in a bowl or jar to cool and store at room temperature for up to 1 week in a sealed glass mason jar. If it becomes too thick to your liking, rewarm in the microwave for 20 seconds or in a saucepan before serving.
Cool the bars

Serve and store
- Serve bar with a drizzle of caramel.

Servire
You can eat these apple oat bars plain or with some peanut butter caramel. To make the caramel combine all the ingredients below to form a sticky, runny vegan caramel.

These turned out fantastic and delicious! Very forgiving too as I ran out of coconut oil while measuring so topped off amount needed with some olive oil and subbed in raw honey for the maple syrup (personal preference). I also added dried cranberries and boy are these good! I skipped the caramel altogether as my son has a nut allergy but it wasn’t needed at all. I’m not sure what I did wrong — I followed the recipe closely, though I used ghee instead of coconut oil. After making the crust, I set some aside for the crumble on top but ended up with so much that I threw some away. I baked it for 35 minutes, and after letting it cool for about three hours, I went to cut it into bars — but the whole thing crumbled! It still tastes amazing (we’re definitely eating it anyway!), but I’d love to know what might have caused it to fall apart.
The ghee! Coconut oil firm up as it cool down and solidify the bar. Or, you didn’t add enough of the crumb for the base layer because you mentioned that you throw away some which is not possible, you do need all the quantity to form a thick bar later at the bottom.
Can I substitute coconut oil with olive oil or avocado oil?

Well, yes usually it’s a decent swap to oil, the only thing that could happen is that the crust might be fragile – more crumbly and wet. Maybe if you add a tablespoon flaxmeal as a binder it will hold better.

I’m looking forward to trying these. I am a bit confused about your note that Rolled oats are also known as instant oats. They are not the same. Rolled oats are thicker and take longer to cook. Instant oats are thinner and cook more quickly. Does your recipe need instant oats?

These were absolutely incredible!!! I was looking for a healthy Apple “dessert” but always would come across apple breakfast recipes and they just weren’t satisfying or sweet enough. This one is a keeper! It tasted like apple crisp in bar form and I loved it! When making my apple mixture I added more Apple pie spice and a tablespoon or two of butter and simmered for about 15 minutes to make sure the apples were soft before I baked them because I like a softer apple filling. I also added more crumb to the topping but it really didn’t need it. I decided to use my date caramel for the drizzle but I will definitely try yours next time! Thank you so much for this. I was tired of wasting ingredients on recipes that were not very good. This one was a winner!!!
