PUMPKIN BANANA COOKIES
▢ ½ cup Pumpkin Puree ▢ ½ cup Mashed Ripe Banana ▢ ¼ cup Peanut Butter ▢ 4 tbsp Maple Syrup ▢ 2 ½ cup Quick oats
Combine Wet Ingredients
In a large mixing bowl, combine all the wet ingredients: pumpkin puree, mashed banana, maple syrup, vanilla, and peanut butter. Stir until fully combined.
Add Oats and Spices
Stir in quick oats, cinnamon, and chocolate chips if used. Combine until it forms a consistent and sticky oatmeal cookie dough forms.
Use your hands or an ice cream scoop to shape 12 cookie balls. Place each ball onto a baking tray. Flatten them slightly.
Bake Pumpkin Cookies
