Easy Vegan Recipe
Vegan Mashed Sweet Potatoes ▢ 3 pounds Sweet Potatoes ▢ 1 Garlic Clove ▢ ¼ cup Vegan Butter ▢ ¼ cup Unsweetened Almond Milk ▢ 1 tsp Salt ▢ ¼ tsp Ground Pepper ▢ 1 tbsp Nutritional Yeast
Slice the Sweet Potatoes into small 1-inch cubes with a sharp kitchen knife (Sweet Potatoes are hard!).
Cook the sweet potato cubes in a saucepan with boiling water for 15-20 minutes.
Drain and mash the cooked sweet potatoes with a potato masher in a large saucepan.
Bring it back to the heat and add the vegan butter, almond milk, garlic, salt, and nutritional yeast.
Cook for 5 minutes and serve with a sprinkle of fresh herbs and vegan butter.
