I love the flavors of carrot cake in everything from Carrot Cake Chia Pudding à Gruau cuit au four à la carotte but today I wanted to make a dessert bread loaf that tastes like carrot bread and it’s amazing. It’s moist, soft, sweet, full of flavors.

Carrot Cake Bread
Ingrédients
- 1 ½ tasses Carottes râpées
- ⅓ tasse Compote de pommes non sucrée - (remarque 1)
- ½ tasse Huile d'olive au goût doux - (remarque 2)
- 1 tasse Sucre de noix de coco - (remarque 3)
- ⅔ tasse Lait d'amande - (remarque 4)
- 2 Cuillères à café Extrait de vanille
- 1 cuillère à café La cannelle
- ¼ cuillère à café Ginger - (remarque 5)
- 1 ¾ tasses Farine tout usage - (remarque 6)
- 1 ½ Cuillères à café La levure chimique
- ½ cuillère à café Le sel
- ½ tasse Pacanes hachées - (remarque 7)
Instructions de Pose et d'Entretien
- Preheat the oven to 350 °F (180 °C). Line a 9-inch x 6-inch loaf pan with a piece of parchment paper. Lightly oil with cooking oil spray. Set aside.
- In another large mixing bowl, grated carrots, applesauce, olive oil, sugar, almond milk, vanilla extract, cinnamon, and ginger. Stir with a rubber spatula very well to combine everything together.
- Fold in flour, salt, and baking powder. Stir again until a consistent cake batter forms.
- Fold in chopped pecan, and stir a few time to evenly incorporate.
- Transfer the batter in the prepared pan.
- Bake the bread on the center rack of the oven for 45-55 minutes at 350 °F (180 °C). I foil the top of the pan after 40 minutes to prevent it from burning too fast. Insert a long skewer in the bread to check if it's cooked through. If it comes out clean, it's ready to remove from the oven.
- Let it cool down for 10 minutes in the pan at room temperature, then on a rack completely before slicing.

No, almond flour will never work, the bread will never firm up. I don’t have a diabetic low-carb version of this for now as I don’t bake with eggs, almond flour will mostly likely include high carb ingredients in my recipes

I’m really intent on baking everything that shows up, I was really hoping this carrot Loaf would be my favorite. The taste is amazing, but I just can’t get it not to be gummy on the top no matter how long I cook it for. With that said, we will just toast it under the broiler to try to firm up the top, but besides that it’s awesome.
I never heard of that before and I am sorry this happened to you! In baking the top out outside always bake first, unless the heat is not diffuse properly on top of the oven.
