Acestea Briose cu nucă de cocos are a super-easy muffin recipe made with no refined sugar, no eggs, and no dairy.
I love simple muffin recipes, like my Briose ușoare cu afine și Brioșe cu iaurt but I also love the taste and flavors of coconut so I decided to make these simple coconut lime muffins.

Briose cu nucă de cocos
Ingrediente
- ¼ ceaşcă Suc de lămâie - (nota 1)
- ¾ ceaşcă Lapte de cocos conservat - (nota 2)
- ½ ceaşcă Ulei de măsline cu aromă blândă - (nota 3)
- 1 ceaşcă Zahăr din trestie nerafinat - (nota 4)
- 1 ceaşcă Nucă de cocos deshidratată neîndulcită - (nota 5)
- 2 lingurițe Zest de lime - Opțional
- 1 linguriță Extract de vanilie
- 2 cupe Făină auto-crescătoare - (nota 6)
- ¼ linguriță Sare - Opțional
Instrucțiuni
- Preîncălziți cuptorul la 180°C (350°F). Tapetați o tavă de brioșe cu 12 găuri cu forme de hârtie pentru brioșe. Ungeți ușor formele de hârtie cu spray de ulei. Dați deoparte.
- Cut the limes in half, squeeze their juice to get the amount needed. Grate some of zest if you want to add some to the batter. Remove any lime seeds from the juice if some dropped. Set aside.
- In a mixing bowl, add lime juice, canned coconut milk, olive oil, sugar, desiccated coconut, and vanilla extract. Whisk to combined.
- Fold in the self-rising flour, salt and lime zest if used. Using a rubber spatula stir to incorporate and form a smooth muffin batter.

Can I omit the lemon and pineapple juice and just mix the rest of the ingredients?
I would love to help you but there’s no pineapple juice in this recipe. You can swap the lime juice by pineapple juice if it’s what you mean.
