Date Nut Bread
Ingrediente
- 1 ceaşcă Date medjool - pitted, finely chopped, 5.5 oz/155g (note 1)
- 1 ½ cupe Lapte cald de migdale - (nota 2)
- 2 cupe Faina de toate scopurile - (nota 3)
- 2 lingurițe Praf de copt
- ½ linguriță Praf de copt
- 1 linguriță Scorţişoară
- ¼ linguriță Sare
- 1 linguriță Extract de vanilie
- ½ ceaşcă Ulei de măsline cu aromă blândă - (nota 4)
- ⅓ ceaşcă Nuci decojite - (nota 5)
- ⅓ ceaşcă Nuci pecan tocate - (nota 6)
Opțional
- ½ ceaşcă Zahăr din trestie nerafinat - (nota 7)
Instrucțiuni
- Preheat the oven to 350 °F (180 °C). Line a 9-inch loaf pan with parchment paper. Slightly oil the paper with oil. Set aside.
- Place the pitted dates in a glass bowl, cover with warm almond milk. Place a plate on top of the bowl to keep all the moisture in. Set it aside for 10 minutes.
- In a large mixing glass bowl, add flour, baking powder, baking soda, cinnamon, salt, and sugar if used. Whisk to evenly combine.
- Pour the dates with the milk into a blender and blend on medium-high speed until a paste forms.
- Pour the date paste into the bowl with the dry ingredients. Add oil, vanilla extract. and chopped nuts.
- Use a rubber spatula to stir to form a smooth batter.
- Pour the bread batter into the prepared pan.
- Bake the bread at 350°F (180°C) on the center rack for 25-35 minutes until a toothpick inserted in the center comes out clean.
- Let it cool down for 10 minutes in the pan, then transfer it to a cooling rack. Keep it at room temperature for a few hours before slicing.

- Zahăr din trestie nerafinat – This is optional, but I recommend it if you have a sweet tooth or if your dates aren’t very sweet. You can also use coconut sugar or soft brown sugar.

Let me share a few more tips for a perfect date nut bread!
- Best Dates – I find Medjool dates work best because they are the sweetest and richest, which makes the bread very moist. If you use other, drier dates, the bread might not turn out as soft or sweet.
- Nivelul de dulceață – If you’re using a drier date variety or just have a sweet tooth, feel free to add the optional sugar to the dry ingredients. Any granulated sugar, like coconut sugar or brown sugar, works well.
- Nut Varieties – You can easily play with the types of nuts to change the flavor. Walnuts and pecans are classic, but almonds, pistachios, or cashews are also great choices.
- Add Chocolate – For a sweeter bread, you can add chocolate chips. I recommend stirring in up to 1/3 cup, but if you do, you should reduce the total amount of nuts by 1/3 cup so the batter isn’t too crowded.







Absolutely love this recipe but would love to add some more natural protein if possible – would potentially 1 cup flour and 1 cup oat flour work?
If you swap flour for oat, the bread will be dense and packed. I would rather add 1/2 cup hemp seeds and keep the recipe as pre written. Your texture won’t change but you will sneak in 25-30 g proteins.

I always bake with unsweetened almond milk, but if you like your bread sweeter you can opt for a sweetened milk.

I love it and will make it again fore sure, just one thing…it took close to 60 min to bake at 350 in conventional mode in a 9 inches bread pan. On any given day you probably have everything in hand to make this recipe.

Hello, do I need to use glass bowls? I have the bowl from stand mixer and Pyrex bowls. Can those be used.
